Il Pecorino Toscano DOP Manciano fresco è il classico formaggio di pecora a pasta tenera, prodotto con latte ovino pastorizzato con aggiunta di fermenti selezionati autoctoni, caglio e sale. La stagionatura minima è di 20 giorni, come stabilito dal Disciplinare di produzione per poter apporre il marchio DOP a inchiostro. Viene consumato generalmente dopo 30-45 giorni e il suo sapore dolce e delicato evoca il profumo dei pascoli della Maremma e della Toscana.
